Purpose of the Role
The Blockman is responsible for cutting meat products to the highest quality standards as directed by the Butchery Manager’s production plans. The role requires expertise in meat cutting techniques and customer service to ensure a seamless experience for SPAR’s clientele.
Key Responsibilities
- Daily Production Implementation:
Execute daily meat production plans, ensuring adherence to quality and quantity standards. - Stock Control:
Manage and control stock levels to meet production and sales demands while minimizing waste. - Point of Sale (POS) and Pricing:
Accurately manage pricing and product displays, ensuring all items are appropriately labeled and easy for customers to identify. - Hygiene and Housekeeping:
Maintain strict hygiene and cleanliness standards in the butchery to comply with health and safety regulations. - Customer Interaction:
Provide excellent customer service, assisting clients with product selection, special requests, and general inquiries.
Minimum Requirements
To qualify for this role, candidates must meet the following criteria:
Education:
- Grade 10 school leavers certificate or NQF Level 3 equivalent.
- Grade 2 Meat Cutting Certificate.
Professional Training:
- Completion of a recognized butchery apprenticeship or learnership program.
Experience:
- Minimum of two years’ experience in a Halaal Butchery setting.
- Supermarket experience is advantageous but not mandatory.
Required Skills and Knowledge
Skills:
- Cutting Techniques: Proficiency in cutting all meat species, including beef, lamb, poultry, and pork.
- De-boning Expertise: Precision and speed in de-boning meat to meet production targets.
- Meat Processing: Knowledge of meat processing methods and equipment.
- Communication: Strong verbal communication skills to interact effectively with customers and team members.
Knowledge:
- Product Knowledge: Familiarity with various meat products and their unique qualities.
- Cold Chain Management: Understanding of maintaining the cold chain to preserve meat quality.
- Production Planning: Experience in creating and executing production schedules.
- Meat Cutting Techniques: Advanced knowledge of block tests, costings, and quality standards.
- Sanitation: Expertise in sanitation protocols and health standards.
- Cooking Methods: Understanding of meat and poultry preparation methods.
- Industry Trends: Awareness of current butchery and retail trends to enhance customer satisfaction.
